I'm Back! LOL I have been busy over the School Year, I was on an amazing Debate team! (They always loved it when I brought treats) I did Model UN, Band concerts and auditions! Most of all though I moved in February! New School is awesome! So I have been a little busy. But through it all I have always been cooking! So here is some photos and recipes of things that I have cooked over the school year!
When we moved some neighbors helped us move so I made oatmeal pudding mixed chocolate bars, flour less peanut butter cookies, and sugared chocolate cookies.
Mushroom sauce with a brown roux, I added brown rice vinegar and black pepper for extra zing. I made a big meal for my dad when he came home, mash potatoes, broccoli, bread my mom made, good cream soda, and of course the mushroom sauce topping the pork chops.
My moms recipe of Lemon bars is to die for!!! Not eggy, not to sweet, and perfectly tart ! My Great great grandpa has alzheimer's and he loved this. Also my Grandma loved them to. Here is the recipe.
Lemon Squares
Stir together: 1 1/2 cup flour and 1/2 cup sugar
Cut in : 1 1/2 sticks ( 3/4 c ) cold butter
Add: about 1/8th cup water
Press this mixture into a 9 x 13" glass baking dish
Bake for 20 min at 325 degrees
While this is baking, whisk together the next ingredients in order listed: 6 eggs, 1 cup and 2 Tbs Lemon Juice (must be fresh!!!), and 3 cups sugar. After crust is cooked whisk lemon mixture one more time and add to it: 1/2 cup sifted flour, if there are lumps you may need to put it in the blender. Pour lemon mixture on top of the crust, place back into the oven, turn it down to 300 degrees, then bake for 35 min. When chilled dust with powdered sugar.
Chicken and drop spelt wheat flour dumplings not only fun to make but very delicious comfort food. Veggies for the soup green beans, carrots, peas, and onions. The stock I made from the extra chicken scraps. Then the Chicken I breaded with flour and browned first before I put it in the soup. It thickened the soup. YUMMY! My mom came home to a meal.
This is one of the banana cream pies I have learned how to make in my foods class in my new school. My new school has a competitive cooking team! The recipe is not perfected yet but I sure love the flavor.
This is a perfect smoothie for movie nights, tropical mango pineapple and lemon. Very refreshing.
